About Lake's Folly Hill Block Chardonnay
The 'Hill' at Lake's Folly is, without question, one of the finest viticultural sites in the Hunter Valley. Heavy, red soil overlays a distinctive limestone layer that produces wine of exceptional depth and character.
Hill Block Chardonnay is handled a little differently to the traditional Chardonnay at Lake’s Folly, where we utilise a higher percentage of larger format French oak for Hill Block (500-litre casks, versus 225-litre barriques for the traditional), and 100% full barrel fermentation, with a warmer, faster fermentation in barrel and generous yeast lees contact, which helps to create texture.
This winemaking approach, coupled with the different soil profile on the Hill - heavy red clay - produces a distinctly different wine style to the traditional Chardonnay which is from the old vines on the flat lower blocks.
